At Olio Food Truck, we serve more than just street food: we offer a one-of-the-kind experience.

Our project was born from the desire to unite different cultures in a single, great gastronomic embrace, blending the mastery of Italian culinary art with the purity of local ingredients from Trøndelag to create an authentic and original street food.

We carefully select local and organic products, actively supporting the producers of our region.

Choosing “kilometer zero” ingredients is more than just a matter of quality; it is a commitment to sustainability and the celebration of our territory. Our Pizza Sandwich is the symbol of this union: a perfect synthesis of Mediterranean passion and premium Norwegian raw materials. The Original Pizza Sandwich

Freshly fried, hand-filled, irresistible from the very first bite

It all begins with a long-leavened dough, prepared daily using only flour, water, yeast and salt.

The base is fried to order: a process that creates a perfect golden hue and an incomparable texture. Incredibly crispy and light on the outside, yet soft, warm and airy on the inside. It is this contrast of textures that makes the Pizza Sandwich truly one of a kind.

Once fried to perfection, our pizza sandwich is sliced open while still steaming to be hand-filled with seasonal ingredients and our signature
homemade sauces.

Each filling is a sensory journey that pairs iconic Italian flavors with local seasonal treasures, such as reindeer meat from Røros, the prized Grotteost cheese from Hitra and fresh mozzarella produced in Namsos.

There is a place for everyone at our table. Whether you are a lover of bold flavors, vegetarian, vegan, or require Gluten-Free options, our Pizza Sandwich is designed to include everyone.

And for those with a sweet tooth, the magic continues with our dessert version.

We are Samuel and Evelyn and Olio is much more than a food truck: it is our dream taking shape. It is a project that bridges our Italian roots with the land that welcomed us, which we have chosen to honor through our food.

Olio was born from a profound inspiration: to bring the vibrant soul of Italy amidst the scents and the wind of the fjords. We chose Trøndelag to create a culinary encounter that reflects who we are, a faithful mirror of our duality. This union is also captured in our logo, where the Italian and Norwegian flags meet and embrace, just like they do inside our Pizza Sandwich.

Every day, we literally “get our hands in the dough” because we believe in the value of craftsmanship. We find true joy in seeing our customers discover a flavor that, for us, means home, but here finds a new, incredible voice.
